Thanksgiving Potato Rolls - a moist and delicious take on an old standby!
Gluten Free Dinner Rolls

1 cup mashed potatoes
1 TBSP yeast

1/4 tsp sugar
1/4 cup warm water 
1 cup whole milk or other substitute
1/2 cup sugar
2 XL eggs
4 cups GF flour mix
3/4 tsp salt
1 stick butter cut into pieces

Dissolve yeast and sugar in water.
Scald milk, add 1/2 c sugar, cool
Whisk eggs together.

In food processor:
4 c flour
Salt, butter, process
Milk and yeast mix
Eggs
​Potatoes

Process until ball forms, adding more flour if needed. Roll into small rounds in hands and place close together in buttered pan.
Let rest for 1 hour.
Bake at 350 degrees for 13 min.
